Fall is quickly approaching – the perfect time to enjoy the garden harvest! Prepare this simple caprese salad and take in the flavors and colors of the last days of summer.

Heirloom Caprese
3 heirloom tomatoes (choose a variety of colors)
½ ball fresh mozzarella
4 sprigs fresh basil
1 Tablespoon olive oil
1 Tablespoon balsamic vinegar
1 ½ – 2 teaspoons fleur de sal (or sea salt if you don’t have fleur de sal)
Freshly ground pepper
Slice tomatoes into ¼ inch thick round slices. Slice the mozzarella into ¼ inch thick rounds, and then slice each round in half. Rinse and dry the basil leaves. Tear the leaves off of the stems.
Place 4 tomato slices on each of 4 plates. Place a slice of mozzarella on top of each tomato slice. Top each slice of mozzarella with a basil leaf. Drizzle one teaspoon each of olive oil and balsamic vinegar on top of each plate of tomatoes, mozzarella, and basil. Sprinkle each plate with fleur and freshly ground pepper.
You can also prepare a large caprese platter as an appetizer vs. making individual salad plates.
