Got home from yoga this morning and wanted something fresh and delicious. Grabbed a tomato and cucumber from the garden, added some avocado, red onion, jalapeno, cilantro, salt and lime and voila! A light and super tasty salad that also serves as a delicious salsa with tortilla chips. Simple, easy, and oh so satisfying!

Salsa Salad

½ medium-large cucumber, diced
1 medium tomato, diced
¼ red onion, diced
½ jalapeno, diced
½ avocado, cut into small cubes
1 medium-sized handful of cilantro, chopped finely
Juice of ½-1 lime
1 teaspoon olive oil
1-2 teaspoons sea salt

Add all ingredients to a medium-sized bowl. Mix well. Add more salt and lime to taste. Serve as a side dish along chicken or fish or serve as a salsa with tortilla chips. Enjoy!
