Savory Cilantro Lime Halibut with Watermelon Salsa

Simple, easy, and delicious halibut recipe paired with a tangy watermelon salsa.
  • <g class=”gr_ gr_137 gr-alert gr_spell gr_run_anim ContextualSpelling ins-del multiReplace” id=”137″ data-gr-id=”137″>Halbut</g>
  • 2 limes
  • 1 garlic clove, cut into small slices
  • 1 handful cilantro, leaves and tender stems
  • ¼ yellow onion, coarsely chopped
  • ¼ jalapeno, cut into slices
  • 1 ½ teaspoons cumin
  • 1 teaspoon sea salt
  • 2 Tablespoons extra virgin olive oil
  • 2 halibut steaks
  • Watermelon Salsa
  • 1 thick slice (half-inch thick) of <g class=”gr_ gr_142 gr-alert gr_gramm gr_run_anim Grammar only-ins replaceWithoutSep” id=”142″ data-gr-id=”142″>whole</g> watermelon, diced
  • ¼ yellow onion, thinly sliced
  • ½ jalapeno, thinly sliced
  • 1 handful cilantro, chopped finely
  • Juice of 1-2 limes
  • 1 teaspoon sea salt
  1. Finely grate the zest of one of the limes and add it to the bowl of a mini food processor.
  2. Squeeze <g class=”gr_ gr_133 gr-alert gr_gramm gr_run_anim Grammar only-del replaceWithoutSep” id=”133″ data-gr-id=”133″>in </g>the juice of the lime and add the garlic, cilantro, onion, jalapeno, cumin, and salt and pulse until roughly chopped.
  3. Continue to pulse as you add 1 tablespoon of the olive oil and more lime juice as needed so the mixture becomes a thin sauce.
  4. Place the halibut in a casserole dish.
  5. Spoon the sauce on each side of the steaks.
  6. Let marinate for 10 to 15 minutes while you prepare the watermelon salsa.
  7. For the salsa, combine all salsa ingredients in a bowl.
  8. Add more salt and lime to taste.
  9. Heat 1 Tablespoon olive oil over medium heat in cast iron skillet.
  10. Place the halibut steaks in the skillet.
  11. Allow to cook for 5-7 minutes per side, depending on <g class=”gr_ gr_135 gr-alert gr_gramm gr_run_anim Grammar only-ins doubleReplace replaceWithoutSep” id=”135″ data-gr-id=”135″>thickness</g> of steaks.
  12. Steaks are done when the fish flakes easily away when combed with a fork.
  13. Place a filet on each of two plates.
  14. Add a large scoop of watermelon salsa alongside the halibut.
  15. Enjoy!

You can also place the halibut on a bed of mixed greens and top with the watermelon salsa for a simple salad or chop up the halibut and serve halibut tacos with watermelon salsa.
