Hot and Spicy Paleo Chicken Wings

6 whole wings

½ Tablespoon sea salt

½ Tablespoon black pepper

1 teaspoon chili powder

½ teaspoon cayenne

1 teaspoon paprika

½ teaspoon dried Italian herbs

½ jalapeno, diced

1 garlic clove, diced or minced

2 Tablespoons organic, grass-fed butter, melted

¼ cup Frank’s original hot sauce (check the ingredients)

Combine salt, pepper, and spices in a small bowl. Rub into wings. Set wings in refrigerator for 20-30 minutes.

Preheat oven to 450’. Place wings on a slotted roasting pan. Bake for 15 minutes, flip the wings, and then bake for 15 more minutes.

While the wings are cooking, prepare the wing sauce. Combine the hot sauce, melted butter, garlic, jalapeno, a dash of cayenne, black pepper, and chili powder in a bowl. Once the wings have cooked, place the wings in a bowl and coat with most of the wing sauce. Reserve some sauce. Place the wings back on the roasting pan and bake for an additional 10 minutes to set the sauce. Remove from the oven. Place the wings on a serving dish and coat with the remaining sauce. Serve with homemade blue cheese dressing.

Homemade Blue Cheese Dressing

2 ounces good blue cheese

¼ cup plain organic Greek yogurt

1 ½ Tablespoons olive oil

1 ½ Tablespoons apple cider vinegar

1 teaspoon salt

1 teaspoon black pepper

Combine all ingredients in a bowl and mix well. Serve.

Baked Spicy Sweet Potato Fries

1 medium-large sweet potato

1 garlic clove, minced or diced

½ Tablespoon sea salt

½ Tablespoon black pepper

½ teaspoon cayenne

2 teaspoons paprika

2 teaspoons chili powder

1 teaspoon dried Italian herbs

1 Tablespoon olive oil

Preheat oven to 450’. Combine garlic and herbs in small bowl. Cut the sweet potato in half then cut into 1 inch strips. Place in a large bowl. Pour the garlic, herbs, and olive oil on top of the sweet potato strips. Mix well. Place on a baking sweet so that the strips do not overlap. Bake for 15 minutes. Remove from oven and using a metal spatula, flip the strips. Bake for an additional 15 minutes. Remove from oven and serve with homemade blue cheese dressing and hot and spicy paleo wings.
